I want to thank you for all of your prayers and concern...
Hubby is doing much better, his heart was ok, now it's up to the neurologist to see what he can do.
My daughter got good news, praise the Lord. They got it all out, and it was totally benign.


Baby gr-grandson wants to make a pie.

COCONUT CREAM PIE

1 cup sugar
3 T. cornstarch
dash salt
2 T. butter
1/4 cup sugar (for egg-whites)
2 eggs, separated
1 cup shredded coconut
2 cups milk
1 teaspoon vanilla
1 baked pie shell

Mix and cook over low heat;
Sugar, beaten egg yolks, cornstarch, salt, mild, and coconut until thick. Pour into crust. Beat egg whites until stiff, add 1/4 cup sugar and beat til sugar isn't grainy. Pile on top of pie filling and sprinkle coconut on top. Bake in 350 degree oven until egg whites are golden brown.

We love this pie around here.
